The girls had some friends over after school and I wanted to bake some oatmeal chocolate chip cookies, containing less sugar than an old recipe I’ve used in the past.
I did a quick internet search, and voila! A link to the “Best Ever Healthy Chocolate Chip Cookies” appeared. Well now. You can’t go wrong with that. I checked out the recipe on “Chelsea’s Messy Apron”, and had everything on hand and liked the ingredients, so it was an easy decision. I used coconut sugar for brown sugar, and whole oats for the quick oats, but otherwise followed the instructions.
The only thing was that this recipe called for the dough to be chilled for one hour to firm up the coconut oil and prevent the cookies from flattening like a pancake. Who can wait one hour for cookies? I thought instead of waiting, I’d put them in a pan and make cookie bars. Why not.
They are really tasty, although very crumbly. Likely my fault for not waiting. Definitely kid and Mama approved!
